Chocolate Chip Muffins

Last night I wanted warm, melty chocolate. However, I didn’t feel like making cookies and had the ingredients on hand to attempt to make some relatively healthy muffins, and here’s what I came up with:

Here’s what went into the mix (roughly, because I have a hard time making myself measure):

  • One cup whole wheat pastry flour
  • One cup rolled oats
  • 2 t baking powder
  • 1 t baking soda
  • Spices of choice like cinnamon, nutmeg, etc
  • 1/2 tsp salt
  • 1/4 cup organic honey
  • One cup(ish) unsweetened applesauce
  • 1/4 cup liquid (soy milk, nut milk, etc.)
  • 2 T oil, I used grape seed oil
  • 1/2 cup to 3/4 cup chips

Blend together dry ingredients.  Make a well in the center and add in liquid ingredients, then blend just until mixed.  Lastly, fold in chocolate chips.  Cook in a 375 degree oven for about 20 minutes.

These were not my best muffins ever, but they passed the edible test. I probably would up the pastry flour and down the oats; add some vanilla or almond extract, and maybe add more liquid.  Also, a cup of mashed banana probably would have added depth to these, more than the applesauce did, but I didn’t have any ripe ones on hand. Considering their healthy ingredients, though, and melty warm chocolate chips, they weren’t half bad.
