Drink Your Vegetables!

May 26, 2009

Recipe for Drinking Your Veggies (aka Green Monster or Green Smoothie)

Ingredients:

  • Water or other liquid such as soy milk, almond milk, rice milk
  • Leafy greens such as spinach or kale
  • Bananas (I prefer to use frozen ones)
  • Optional add-ins like freshly ground flax seeds, peanut butter or other nut butter, even cocoa powder!

Directions:

Did you grow up hating vegetables like I did?  Do you still hate vegetables?  Well, if you have a decent blender, you should really, seriously, try making one of these:

Bright Green Breakfast!

Bright Green Breakfast!

Mmm, thick and creamy!

Mmm, thick and creamy!

This may look like some sort of nuclear dumping ground find, but it’s really two small frozen bananas, a couple handfuls of raw organic spinach, and about 3/4 cup cold water, all blended up in my Vitamix.

I first tried this about a month ago using kale instead of spinach, which I also like. I was very scared to take my first sip, but you really cannot taste the vegetables at all.  This is such a great way to get in your leafy greens, I’ve even put bok choy in them! They can be widely varied, but I would definitely include the bananas as the the fruit base, as they are creamy and sweet and do a great job of balancing out the greens.

Get creative and add-in whatever you like, I even put cocoa powder in a smoothie where I had used a sweeter soy  milk instead of water, and it was like a chocolate milkshake! With spinach! Crazy.

Your health is important, and eating well should be a top priority.  If you don’t like leafy greens but really want to include them in your diet, try this recipe!

I do a 1)frozen fruit (bans or blueb) and frozen almond milk cubes
2)zucchini (great for balancing moods/anxiety, plus its tasteless and adds bulk),
3)swiss chard or dark leafy green,
    4)vanilla xtr and stevia.J
    Just a dash of water…addictive!
